How to Make Amazake:
To create your own amazake, mix 400ml of water with 250g of freshly cooked rice, ensuring no lumps remain. Stir in 200g of dried rice koji and transfer the mixture to a rice cooker. Cover with a damp cloth and keep warm at 50℃ to 60℃ for 6 to 8 hours. Store your amazake in an airtight container in the refrigerator for up to a week.
