This versatile pickling vinegar is expertly crafted from a blend of sugar, salt, sweetener, and traditionally brewed Japanese vinegar, delivering a perfect balance of sweet and sour flavors. Not only is it ideal for pickling shallots, but it can also be used to pickle ume plums, daikon radishes, cucumbers, and a variety of other vegetables.

Instructions:
To pickle shallots, wash and trim 1kg of rakkyo shallots, then pour boiling water over them while draining well. Combine the shallots with sliced red chili and 700ml of Rakkyo Vinegar in a large container. Seal and store in a cool, dark place for 2-3 days, shaking the container 2-3 times a day. After 10 days, your pickled rakkyo shallots will be ready to enjoy!
For a refreshing salad, shred cabbage, julienne carrots, and mix with minced onion. Combine 40ml of oil, 5 tablespoons of Rakkyo Vinegar, and season with salt and pepper. Chill in the refrigerator before serving.
