How to Prepare:
1. Gather your tools: a pot with a lid, spatula, kitchen thermometer, and kitchen cloth.
2. Combine 200g of cooked rice with 500ml of hot water (70℃/158℉) in the pot and stir well.
3. Add the entire contents of the Plus Koji to the pot and mix while heating on low. Maintain a temperature of around 60℃ (140℉).
4. Cover the pot with a kitchen cloth and let it incubate for 5-10 hours, checking the temperature every hour. If it drops below 50℃ (122℉), gently heat it back up.
5. Once sweetened to your liking, transfer to a clean container and store in the refrigerator or freezer.
